Every so often we find one of our catering menus getting far more love than the others. They have their time in the sun from time to time where they shine out above the rest, if even just for a brief period. In the summer you can typically expect this to be our gourmet barbecue range, or perhaps even our al fresco dining service. In the winter it returns to the comforts of our signature hog roast, or of course our festive turkey menu as the festive season draws near.
Over the last while however the stylish menu making waves with events at Hog Roast Cotswolds has been our unique southern slow roast menu. This is a scorcher of a menu – in more ways than one! Our alternative to the classic British barbecue, the southern slow roast adopts the American south approach to barbecuing by incorporating dry rubs, spice and barbecue marinades, and cooking meats low and slow over the better part of a whole day. This way the meat gets extra tender and the flavour and spicing really comes to the fore, intensifying right the way through that low and slow roasting process.
The southern slow roast was a big hit this summer; a proper summer sizzler that had events coming back for more and more. Now in the autumn as things get cooler, events are still looking for something heat the party up and bring some spice into celebrations. This trend continued once more at the weekend as the Hog Roast Cotswolds team catered for an excellent 50th birthday party, where, as you might have guessed, our sizzling southern slow roast stole the show!
Hog Roast Cotswold’s head chef Rob had a great selection of slow roasted meats available for the 50 guests in attendance. Our Texas style beef brisket was a big hit, alongside our BBQ pork butt and Cajun spiced chicken. Knowing that such spicing may require a good bit of cooling, we also had creamy mac, sweet potato fries, and a refreshing seasonal green leaf salad on the side.
